About the Samples
Every sample prepared was fully dispersed and hydrated using a Silverson high shear mixer, ensuring maximised yield.
A food-grade Sodium Alginate was used for these demonstrations. Results can vary depending on the brand and grade used, as well as the mixing system employed. Inadequate dispersion or incomplete hydration can create agglomerates, reducing the yield of the thickening effect.
This video illustrates the viscosity and flow characteristics you can expect when the alginate is dispersed, hydrated, and brought to full yield with a Silverson mixer.
